Claudio Plessi, a retired professor and preserver of antique grape varieties, works with a library of old varieties, and the one used here, Uva Tosca, deserves revival. A cold-resistant variety from the
mountains, it is gently colored and deceptive, as it packs a punch of tannins, but its mix of leather, musk, and gentle bubble is totally charming.
